This latte is the perfect vibrant mood lift for those mornings when you need a little extra cheering up. To make it an extra cheery morning, make blueberry pancakes to go along with it ;)

INGREDIENTS

Blueberry Simple Syrup:
1-2 handfuls of Blueberries
Agave to taste (1-2 tsp)
1 oz water
Cinnamon to taste
1 tsp Vanilla

1-2 tbsp Coffee SuperLatte

4-6 oz water

Ice (lots!)

2-4 oz cold plant milk (we used oat)

INSTRUCTIONS

For the blueberry simple syrup:
Combine blueberries, agave & cinnamon in a small pot. Add vanilla and a splash of water.

Heat all the ingredients for the simple syrup, stirring often. Let it simmer until it is fully combined and shiny.

Set aside to cool and then blend with immersion blender or something similar.

In a separate cup, froth Coffee SuperLatte & water, then pour over ice.

Froth cold plant milk, pour over coffee.

Drizzle the blueberry simple syrup on top.
(Keep extra simple syrup in fridge to use for more lattes, pancakes, or breakfast oats!)
